Seconding a misreading of the hydrometer, broken hydrometer, somethin. A quick wit recipe through beersmith yielding 5.6% ABV (like you originally said) should have an OG of 1.053, replacing your Candi sugar with corn sugar only bumps it up to 1.054.
Not necessarily the end of the world. After 7-8 days chill one and crack it to check it. Not carved enough? Wait 24-48 hours and try another.
Continue until it's perfect then put em all in the fridge to get the yeast to sleep
What got me into craft beer was Widmer Hefeweizen. Pretty good beer, very approachable to a guy who (at that time) knew he didn't like light lagerbut didn't know what he liked.

Just wanted to run my plans past the experts and make sure I'm not missing anything that could throw a huge wrench in my plans. Assistance would be appreciated!
I currently run off a propane burner with my 10g pot for 5 gallon batches, and converted cooler. My desire is to build a new wooden...
Yah fridge doesn't regulate temp for crap, gonna pick up another controller at my LHBS tomorrow along with a few other odds and ends for my next batch.
Yup. You can't see it and these pics but the left side is the bag of the fridge where it can breathe. Purposely cut that a little longer just to give it the appearance of a finished edge. Almost forgot to though when I started!
I haven't give. It a serious run for its money yet, and I still...
