    Johnson Analog for Heat

    I have the Johnson Analog controller that has ability to control heat as well as cold. I just can't remember if you move the black or white wire to the middle post for heat control. I have looked for the old article I read explaining it, but I cannot seem to find it.

    I would've boiled for 90min to avoid DMS since you used pilsner. Everything else looks good, maybe extend the mash time to 60min since you mashed at 150. I'm sure it will turn out great either way.

    fg too low?

    That is actually good news for a cream ale as you really want a dry beer with an FG around 1.010. If it's been about a week and is still bubbling you may have a point or two left in fermentation. I'd let it sit another week.

    Haha due to it being so unstable with the HLT on top. The detergent was the heaviest thing I could quickly find to stabilize it. You can also see a random landscaping brick at the bottom for added stability.
