This looks great! It's very difficult to get honey malt in the UK but I've found a supplier in Ireland. This is going straight on the list after mosaic honey wheat!

It's been described as 'super cascade' - definitely worth trying as a flavour/aroma hop in a pale ale! You'll see it used a lot in pales & IPAs

My first capper wore out after a year or so - it might be worth looking at the bell, but if it looks structurally unsound it's probably just best to replace it for the money they cost. Last thing you want is to find you hadn't sealed bottles & they're flat and oxidised!
I brewed a grapefruit IPA (clone of Brewdogs Elvis Juice), and it was amazing
Heavy on Amarillo, and used grapefruit zest (none of the white bits!) both at the end of the boil & after fermentation via a vodka tincture.
I was shocked also by how much flavour it imparted. I used 1/4 of a cucumber in 10L and it was quite overpowering to begin with, settling after about 1 week in the keg.

Mredge, 50g doesn't sound much but in a 9L batch should work fine, its more or less what i usually use in stouts. The new things for me are the roasted & flaked barley... not sure if its needed? The remainder makes a great stout
As for the sugar, can't mash enough to get that high...
For me it would be fermentation temp. control. I have a chest freezer & temperature controller, but its constantly full of kegs and bottles!
Likewise, I'd like to sort out a way of going from dry hopping to keg with no exposure to oxygen
