    Wheat beer off taste

I like wheat beers, but mine seem to have an off taste. I do all grain, and my efficiency has gone up alot since I stared maybe two years ago. Used to add a little extra base malt, but not anymore, and I still get higher efficiency. I grind my own grain, and for the wheat I do a double to...

How Are You Celebrating National Beer Day?

I brewed an IPA and drank yesterday. At work today, so no beer for me.

English Porter Black Pearl Porter (AG)

Well I went to bottle this today, its been in the primary over a month, I dont really secondary. Its at 1.03, and has a slight grainy cereal smell. Fermented this in my basement that was too cold. Try to pitch more yeast?

Winter Seasonal Beer Christmas in Belgium

I caved in and tried a bottle too early, not even a month! A little green, too much ginger, but that was my fault on the secondary addition. Some delicious hints of fruit notes.

    Imperial Stout Double-W Imperial Stout

Just got done transferring to secondary. Gravity reading of 1.02, lower than supposed to be? Either way, tasted the sample and its amazing! Maybe slightly biased since I brewed it, and I love RIS's.

English Porter Black Pearl Porter (AG)

Just brewed this again, but my OG was 1.07, maybe used 1/2 lb extra two row, I was following last years notes. Must have improved my efficiency since then!

    Imperial Stout Double-W Imperial Stout

I split this into a two day brew. Mashed last night, two sparges. Mashed with 5 gallons, first sparge 3 gallons, second 2 gallons. I got 7 gallons wort. Boiled 2 hours today, got 5 gallons on the nose, and an og of 1.106, pretty close. I was worried when some were saying they had poor...

Spice, Herb, or Vegetable Beer Wild Pecan Porter

Its been almost 6 months since I brewed this, and just to let everyone know, the beer has alot of head when I pour these, the pecan oil did not kill it. And the pecan taste is almost more pronounced now, if thats possible. Very tasty at this age.

Winter Seasonal Beer Christmas in Belgium

Racked to secondary, sample was at 1.008, tasted amazing, then I effed up. Added 2.50 of candied ginger instead of the 1.33. All other additions after that were correct. Read past posts about too much of a ginger taste, how bad is the amount I added, and will it dissipate by December? Add...
