The neighbor lets me raid his garden at the end of the season.
This year he grew some Carolina Reapers for me. His plants didn't produce much, I only got about a dozen.

Jalapeno- tomato, red pepper, carrots, onion, and garlic
Tomatillo - green jalapeno, green pepper, onion ,and garlic. I will add lime juice and cilantro and maybe some cumin to finish
Reapers - jalapeno, Thai bird pepper, red pepper, carrot, onion, and garlic.

All in 2% brine. Will finish the reds with vinegar and a touch of xantham gum for stability
Will check the pH on the tomatillo before adding vinegar- the lime juice should get me below 3.4
I do a hot pack into woozy bottles.

This is the first year I have tried the vac seal bag method.
