I just saw a good recipe for a Irish Red that might work well. I also have a Hefe that I might add more honey to next time to make it like a honey wit. What kind of beer flavor are you looking for? My next brew is going to be an Oatwine (what I hope is a GF version of a Barleywine)

Here's the Irish Red Recipe: (Dad's Red Ale from GFHB)
I think the original uses US-05 as the yeast.

Did you ever attempt the oatwine? I’ve been thinking along the same lines but buckwheat. The fear of a giant pot of oatmeal that is impenetrable I find terrifying!
