I've been listening to the Brewing Network podcast, Can You Brew It - Fuller's 1845. I was surprised to hear John (Fuller's brewmaster) say they bottle condition the 1845 at 2.3-2.4 vCO2. I know the bottle conditioned beers are going to be more highly carbonated than in cask, but I guess I expected them to top out at 2.0, with casks at 1.5-1.7 vCO2. Obviously, I was wrong. I bottled my new system's first brew, a Coniston Bluebirdesque ordinary, at 1.7 volumes. Coming up on week 2 of conditioning. Really good, and about what I expected in terms of low carbonation. Probably not going to be my in-laws' cup of tea over Christmas. Bummer.
