For my last brew day I had my girlfriend go get the ingredients at the LHBS while I was leaving work, and while wondering around the shop she saw a cheese making kit. Well I think soon, we'll start making cheese at the apartment. Currently my girlfriend takes Lactaid pills when she's feeling risky and wants something with dairy in it, being she's lactose intolerant.

So I was wanting to know if I got a bottle of lactase enzyme and added it to the whole milk before starting the cheese making process will it effect the outcome of the cheese in anyway?

I read a thread on here about someone using lactose ultra-pasteurized milk with it receiving a low score on taste and texture, but I'm wanting to add the lactase right before I start mixing everything together.

Thanks.
