Beer's with no carbination.

So Its been almost two years since I had weight lose surgery, and now I'm ready to get back into the brewing game. However turns out after surgery I can't drink beers with carbonation. Beers on nitro are no problem, as well as cask ales.

So I'm asking you to share your cask and nitro recipes. Do you have any? I went to a cask ale fest this past fall and came across 8 different types, including IPA's that had amazing flavors.
