Mash @ 152 60 min with 1# Toasted Unsweetened Coconut Flakes

8# 2-row
2# Vienna

.5 oz Centennial @ 60
.5 oz Centennial @ 25

Pacman Yeast

SG 1.051
FG 1.013

After Primary Fermentation
Dry Coconut (Toasted flakes) 2# for 7-10 days

(Recipe set at 70% efficiency)
Any suggestions for the recipe. I've never used Vienna Malt before.
 
I always thought about a coconut ale but I thought the coconut oil would hinder the carbonation. Maybe the toasted takes care of that.
 
I can't say if coconut in the mash will impact carbonation, but I've toasted it and added to secondary and I had little if any problems with carb (I force carb).
 
I make a chocolate coconut porter & I didn't have any issues with carbonation. I've both bottle conditioned & kegged. Maybe a bit poor on head retention but not too bad.
