Hi,

I'm looking to make a blonde ale for the summer with some citrus character. I don't intend to dry hop so can I add some grapefruit or orange zest during the boil? And if so how much should I add? I'm not looking for a fruit beer but some background notes would be great.

I just did a summer lime ale. Using 6 limes squeezed then the zest at flame out. Added 2 lime zest at secondary. Taste test going to cold crash was good. My first time myself using zest but I'm hoping for good things after everything is said and done.

I've used lemon zest several times on some wheat beers. (I think I use the zest of 3 lemons, have to check my recipe.) I put the zest in a small grain bag and throw it in for the last 5 minutes of the boil. Has always worked very nicely to add just a hint of character to the beer.
