This recipe is based on an American Barleywine but employs the usage of Maris Otter to add a slightly richer malt complexity of the British Style. The reason is to help keep malt complexity in the picture as the lager yeast will be so clean. Upon completion of primary fermentation, I recommend beginning the lager phase and racking to a secondary upon reaching the 90 day mark (from initial pitch). I then plan to bottle the beer and complete the lagering process in the bottle. My lagering schedule dictates one day per point of OG (including primary fermentation). Thus, I would cold store the bottles after carbonation completes until you've reached the 111 day mark. If you have the space and storage, sit on these for a year.
