Recipe specifics:

Style: Imperial IPA Batch size: 5.0 gal Boil volume: 6.0 gal OG: 1.077 FG: 1.019 Bitterness (IBU): 71.7 Color (SRM): 10.7 ABV: 7.5%

8.00 lb Extra Pale LME, 69.6% 2.50 lb Two-row (US), 21.7% 1.00 lb Crystal 60L, 8.7%

Hops:

0.50 oz Cascade (AA 6.6%, Pellet) 60 min, 10.1 IBU 0.50 oz Nugget (AA 13.9%, Pellet) 60 min, 21.2 IBU 0.50 oz Simcoe (AA 13.0%, Pellet) 60 min, 19.8 IBU 0.25 oz Cascade (AA 6.6%, Pellet) 20 min, 3.0 IBU 0.25 oz Nugget (AA 13.9%, Pellet) 20 min, 6.4 IBU 0.25 oz Simcoe (AA 13.0%, Pellet) 20 min, 6.0 IBU 0.25 oz Cascade (AA 6.6%, Pellet) 5 min, 1.0 IBU 0.25 oz Nugget (AA 13.9%, Pellet) 5 min, 2.1 IBU 0.25 oz Simcoe (AA 13.0%, Pellet) 5 min, 2.0 IBU 1.00 oz Centennial (AA 9.0%, Pellet) dry hop 1.00 oz Simcoe (AA 13.0%, Pellet) dry hop

California Ale yeast, 1.0 unit(s), Yeast White Labs WLP001

Recipe Notes:

Mini mash 3.5 pounds of grain in 6 gallons of water or 45 minutes. Sparged for 30 minutes. I took kettle off flame to stir in extract. Off flame for 15 minutes. Add 1 tsp Irish Moss to last 15 minutes of boil. Ferment for 7 days, check gravity and if at gravity put beer into secondary with dry hops. Dry hop in secondary for an additional 7 days.Rack into secondary with dry hop of 1 oz of Simcoe and 1 oz Centennial. Secondary for 7 days. Very flavorful!Very much as the name says, Ambush IPA!

Batch Notes:

TARbrew. Very IN YOUR FACE IPA!1st batch trial Imperial IPA, I'm not afraid :) , this is centered around Simcoe with 1 oz dry hopping along with centennial. Centennial is pushing the citrus flavor with balanced pine. 1.076 OG with aeration. Splashed as much as possible going in. This should be good. We will see. I think next time I will use two yeasts for it. We will see as far as fermenting. fermented for 6 days in primary and reached 1.016 FG and so far estimated abv 7.61%.Initial tasting very nice. No off favors and well balance with hops. I cannot wait to taste finished product.Taste after secondary I taste grapefruit and pine. I have to say it is very balanced and good. Color is of orange and lemon and flavor is citrus and pine. No notes a alcohol. Bias maybe but this is a GREAT IPA! All I can say is that I will do this again!!!!!
