I make big blocks of ice in my chest freezer/fermentation chamber before brew day to use in my recirculating counter flow chiller.
However I need more ice surface area to make the water colder so I usually buy some bags of ice- that sucks. Why should I pay for frozen water? Does anyone have a method for making ice cubes without a hundred tiny trays?

Break up the ice with a hammer? doesn't need to be cubes yeah? Add salt to the water to lower the freezing temperature, though I'm not sure you wanna put salt water through your chiller.

silicone baking pans make icecubes of all sizes

huge loaf shaped icecubes,
muffin shaped icecubes
cornbread shaped icecubes
cake shaped icecubes

I make ice in 1 quart freezing bags and break them in half with hammer.

I bought an ice maker for use mainly in the summer. Beer on ice on the deck in the summer cant be beat. It makes a ton of ice in a week. I place it in large ziplock bags. I usualy run it for a week or so a month to stay on top of ice demands. I give a ton away to friends too.

Pricey item to just make ice, but store bought is around $5 a bag!!
