I made a 1liter starter of Brett brux that has been sitting for 9 days now. I used DME like you would for any starter. I don't have a stir plate so I've just been swirling it whenever I can. It hasn't shown hardly any activity but I noticed today that the smell has become funkier and more Brett-like. I'm using this for a secondary fermentation on a saison am I good to pitch or should I wait longer?
 
From what I've read on here it seems that people's experience varies quite a bit with this strain. Brett strains can take a while to get going but when I used this strain in a saison last year (primary ferm) I pitched it after only a couple days on my stir plate and it took off like crazy. I can't imagine it's need more than 9 days.
