Looks like ill have to try this. What are the properties of el dorado? Never heard of that hop.
 
I've had these hops in an IIPA and it was over-the-top fruity.

I used them (from the same batch of hops) and haven't had that fruitiness. I've used the El Dorado twice for pale ales, and then for this wheat beer.

This beer was really good. Despite the crystal and honey malts, it is a fairly light beer with a nice flavor. Make sure to use at least the IBUs I did, or decrease the crystal malts, to keep it balanced. I'm certain I'll make it again.
 
This is a really good beer. I tried it and immediately bought some more El Dorado!

What are you thoughts on using Wyeast 3638? I have some that I harvested and need to use it.

Then you'd have a hefeweisen. If that's what you're looking for (banana/fruit/clove flavors), go for it. I'm not a fan of german hefe's, so I would not do that.

El Dorado has a fruity flavor that might not play well when combined with the hefeweisen yeast flavors. Might also be a brilliant choice. My crystal ball is not clear.
