Sure. You can add it as late as bottling if you feel you need it.

I haven't used it (it's a "thickener") in anything except root beer, but if you want some in your beer you could add it later on.
 
I'm adding some maltodextrin today after I brewed a porter last night and forgot about it.
 
Well I forgot the maltodextrin and just had a blowoff! Think my RIS is doomed
 
that's what I did (what revvy said) to an English brown as an experiment ...interesting effect....haven't decided whether I like it or not. only used a quarter cup. even noobs can experiment!
