I don't have a refractometer, so i'm wondering if there's a way to check the gravity with a hydrometer? seems like it could get confusing adjusting for that high of a temperature...

Fill a small mason jar and submerge in an ice bath to drop the temp quickly, then use your hydro.

High temperatures are notoriously inaccurate, even with conversions. I now have a refractometer, but before I did I used a hydrometer. I just put the sample (test jar and all) in a pitcher of ice water and stirred the sample gently. It cools quickly to under 100 degrees, then the reading can be taken and adjusted for temperature.
