pruning hops for shade/privacy

I have a hops bed that the sole purpose is to provide privacy for our covered porch (and produce some hops on the side).
What happens when you prune the tip of a bine 5 or 15 feet from the ground? Do they produce side shoots or just stop growing?

They seem to get bushier and grow sideways when you top them, but they still want to grow taller, too and a new shoot will grow tall.

We have one plant that we use on an arbor:

As you can see, it's pretty "top heavy", and very thin on the bottom. There are new shoots coming up under the deck, and all over the yard, as the plant really wants to spread!
 
So it seems you get the same production and shorter bines. Something is not right with that equation or comercial growers would be topping the bines.
Looks like I'll be pruning my hops.
