Hi all, Just wondering what the opinion is on doing a lacto starter (using WLP677, not grains) in apple juice vs using a normal DME + nutrient starter. I've heard that apple juice can give the lacto a better ph environment and simple sugars for it to munch on. thoughts?
 
WLP 677 is a strain that I've been using in my Berliner-inspired beer. I did a normal starter with DME. The strain fermented the starter out to about 1.006 and has done the same to every beer I add it to. It looked a lot like a normal Saccharmoyces fermentation, too. The beers have come out as lightly tart. I haven't used apple juice, but I know people that have. I did not have a problem with DME.
