My wife is a fan of wheat beers, and - being from Atlanta - loved Sweetwater's Sch'Wheat. She was less than happy when they decided to stop production, so I dug through this forum and found https://www.homebrewtalk.com/f36/sweetwater-schwheat-recipe-293122/.

Unforunately, I don't have an all-grain setup so I decided I'd try my hand at converting it to extract.

The recipe: (roughly 66% Light, 33% Wheat)
Malt:
3.3lbs LME - Briess CBW Golden Light
2lbs DME - Briess Bavarian Wheat
1lb DME - Briess Golden Light​
Hops: 1oz. Amarillo
Yeast: Safale US-05

The boil is pretty straight-forward:
60min - LME and .25oz Amarillo
20min - 1lb Light DME and 1lb Wheat DME
5min - 1lb Wheat DME and .75oz Amarillo​

Details:
4.725% ABV
17 IBU
1.046 OG
1.010 FG​

The results:
I'm not a beer judge, but I've had my share of good and bad beers and I'd say this one falls on the good side of things. It's an easy drinker (4.725% ABV) with a clean finish. The hops are there, but more in the nose than the bitterness. I'll definitely be brewing it again (it's received solid reviews from everyone that has tried it), but next time I might filter before kegging (it's a bit cloudy).
