OK, so if I want to filter from the brew pot to get rid of Irish moss, wouldn't even siphoning off add to much oxygen to it, or is it just a matter of sitting the siphon tube on the bottom of the bucket..OR...should I not bother at all?

Oxygen is a good thing pre-fermentation. Yeast require about 8ppm oxygen in the wort for optimum health. You always WANT to introduce oxygen when you pitch your yeast, either through an oxygen stone, stirring the crap out of the fermenter with a wisk, or shaking the fermentor for about 1.5 minutes.

That said, there's really no need to filter out the irish moss. It is heavy enough that it will just become part of the trub layer in the fermenter, and it doesn't hurt the fermentation at all. Just carefully rack above the trub layer when you transfer out of primary, and you'll be fine.
