I am currently fermenting a summer wheat ale. A colleague's family own a raspberry farm in Northern New Mexico that has been producing some of the best raspberries I have ever tasted. He gave me a jar of Raspberry Jam yesterday, whose ingredients include: Raspberries, sugar, and pectin. I was planning on infusing some sort of fruit in the secondary. A few questions here... Has anyone ever used jam in their beer? Should I pasteurize before I add the t secondary? I have heard that breaks down some of the flavor of fruit. I know with fresh fruit you should freeze, thaw before adding, I am thinking I don't need to do this, I could be wrong. Will it be too sweet? It is an 8 oz jar...is this the right amount for a 5 gallon batch? Any other advice would be welcome! Thanks.
