I am planning to brew Maris Otter pale malt with Saaz hops and Safale S04.

I am not going to go crazy on the hops...so the IBU is set on 43. The OG is 1.058 and the FG is 1.018.

Any idea what this beer is going to be like?

I understand that saaz is used in pils....but I am trying to brew a nice, light ale.

It will be......BEER!

Marris otter gives a sweet almost caramel like tone in english styles. S-04 is Witbread English yeast so your good with that
If i were to guess on style it would fall into an English Bitter. The saaz is going to give it some earthy spicey tones.
If you want a nice light ale as in color or body? I would use 2-row (MO is darker) with adjuncts like flaked corn or rice to lighten up the body.

Keep the fermentation temp cool. SO4 can take off and gets nasty at high temps.

MO+Saaz is great. Love it.

I think a guy in my brew club did that for his SMaSH beer this last meeting but he used S-05. Tasted good! Mine was a Munich Mosaic SMaSH that turned out well also :mug:
