What beer to age for the holidays?

I realized that after two lagers (Doppelbock and Dunkel Bock), and an already robust pipeline, I have enough beer in my beer cave to last at least through summer. I like to brew once a month (5G batch) So, I want to brew something that will age well until fall. I have one Wee Heavy ageing for next winter. I am thinking of a clone of Boulevard's Bourbon Barrel Quad, maybe a Mead. What is a great winter beer recipe, or other strong beer that'll be great in the fall / winter?

I figure this brilliant group will come up with something I never conceived of :tank:
