I went to my LHBS today and they were out of Caramalt which I was planning to use in a 21st Amendment clone. I opted for Cara Malt instead. My Grain Bill would be...
(5 gallon)
11# 2 Row
1.5# Munich
.75# Cara Red

Would Cara Red work in this recipe? I may consider adding some 40L Crystal as well.

Thoughts, Comments?

CaraRed is basically Crystal 20 produced by a different maltster (Weyermann).

CaraMalt is more flexible and usually produced by the British. I've seen it listed anywhere from 14-34 Lovibond from Muntons, Simpsons, and Thomas Fawcett.

Crystal malt is not a necessity for an American IPA. However, if using, I would recommend <6% total grist anywhere from 10-40 Lovibond.

That should be fine. It's close enough and subbing that in won't affect the end result nearly as much as good sanitation and proper yeast management will. Recipes are important but solid brewing process is more important IMO. As long as they are similar which these two are.

Thanks for the replies. I'll go ahead with the grain bill (no additional crystal) and see how it turns out.
