Brewed a BIAB Pale Ale 12 days ago. Opened up the fermenter today, thinking MAYBE I can bottle it. took a sample, the Reading was 1.020(OG was 1.052). Ok its not done yet, but tasted the sample and it tasted like apples, had a strong alcohol aroma too, burnt my nose.
3.25 gallon Recipe is:
6lbs 2 row
.75 60L
.25 Victory
.25 munich 10L
.5oz Horizon 60 min
.5 Cascade 15 min
.5 Willamette FO
1 pkg US-05(maybe too much yeast for the volume?)

Will the apple flavor go away? and will the gravity go down any?
Was thinking about leaving it sit and checking it in 7 days.
 
Give it time. Hardest part of your first batch (and all batches) is time. Alcohol and apple flavor will mellow with time. Go have a few commercial brews for "research"
 
Sounds like your initial ferment temp was too high. That can cause it. Give it a couple of days for the yeast to clean it up some. Being in bottles for 3-4 weeks will help to,as long as the apple flavor wasn't too strong.
 
I think time will do. I did cool wort to about 65 degrees at pitch. kept in basement, which is in the mid 60's ambient temp.
 
Sounds like me, but just months ago. Man, I have a ways to go.
