What are your thoughts about this yeast and what are your techniques with this strain? I brewed a simcoe based saison lasted August and I cracked one last night. The Brett character has really come out in front, I love it. I've heard it's a slow worker, and up until last night it's been noticeable but I think it's starting to stand out. I think I'll have to keep this in the pipeline and age them for a while.
