Just thought I would share this recent recipe.
For a 3 gallon batch
2 gallons apple juice
1 gallon cranberry juice
Pectic enzyme
Yeast nutrient
Lalvin 1116 yeast
Simply mix together and let be for two weeks.
Rack into secondary with 2 cans frozen apple juice concentrate, potassium sorbate, and campden.
Let sit additional two weeks, bottle and enjoy.
Result - noncarbonated, semisweet 5ish percent cider that is easy, delicious, and ready quickly
