Brewing my second all grain this weekend.... The recipe for the pale ale I'm planning to brew calls for a 90 minute boil..... My first brew,an amber. Which turned out great only called for 60 mins... Why the extra 30 min?
 
Does the recipe have pilsner malt in the grist? Pilsner malt has a high concentration of DMS precursers that will become DMS off flavors in your beer if you don't do a 90 minute boil to boil them off.
 
It does not.... Speaking with a local brewer and doing a little more reading... The longer boil times also have to do with the size of the grain bill.... Thank you for your reply!! This is such an amazing source of information for beginners like myself and the input is appreciated......
