Want to start a new mead today. Getting 5 lbs honey want to make between 1 and 1 1/2 gallon.

My last one turned out very dry. I used 3 gallons water 10lbs honey. I didn't take in volume of honey and wound up with 4 gallons of dry mead
 
Will be using washed white labs sweet mead yeast. Alcohol tolerance around 15%

Thinking FG around 1.050 would this be to sweet. How do I take in consideration for honey volume
 
Put 3.5 lb honey in a gallon jug, top up with water and shake. Add your nutrients , take a hydrometer reading and add your yeast.

There are a couple ways to make it sweet. Add more honey up front than the yeast can eat through, add keep adding honey(step feed) until it hits the yeasts maximum tolerance or allow it to dry out, stabilize and back sweeten.

I think 1.050 will be extremely sweet
