I recently brewed a Honey Double IPA and I cracked open the first bottle last night. It was a good, but I could definitely sense the presence of honey in it. Therefore, I am wondering if I should let it sit a while longer and let the honey ferment more. If my calculations are correct (there was an issue with the OG), the alcohol is about 10.6%. I only left it in the fermentor for a total of 3 weeks and I read that I high alcohol beers often need more time.

So to drink or not to drink?
 
How long has it been bottle conditioning? I usually let mine go at least 3 weeks for a normal gravity beer, but yours may benefit from a 5 week conditioning timeframe or more. The best way to find out is to try one every week or two and see how they are coming along. If you need help with that... I'd be happy to help with the tasting :mug:
