Pro/Commercial Brewer Conversion Efficiency?

My near dialed-in system nets me 70-72% conversion efficiency.

I am wondering what pro/commercial brewers attain?
 
Mine varies on the brew.

Most brews are between 72-78%
Hefe and wheat as base grain beers are quite a bit lower. Our house hefe averages about 64% and I have been trying to bring it up but nothing seems to work.

I brew on a 3bbl system at work anywhere from 2-4 days a week on average sometimes 5 days.
 
The big ones get close to, if not over, 100%.

I've heard SN gets close to 100% as well.

I'd bet it varies as much as it does for homebrewers.
 
How do you get over 100% efficiency???

Get more extract out than the malsters testing lab. The malsters have a process to extract everything they can, and this is labeled 100%. Well if their error is 1%, then what they label as 100% may actually be 99%...someone else may get that extra 1% and thus have over 100% of the measured efficiency.
