Have brewed a few times but am weary usinf dry yeast. If I use two packets instead of one, will it destroy my recipe? Should I rehydrate or not?

Thanks for all of the help.
 
Also, this time I used a LME that had a thick light colored foam on top.... Never noticed it before. Is that bad?
 
Yes rehydrate. It depends on what kind of yeast it is. US-05 or 04 are as good as any clean fermenting strain. I'm sure if you did a search for information on dry yeast, hundreds of threads would come up.
 
+1 on rehydrating. I'm not sure what the OG on your recipe is but if your brewing something under 1.065ish you would only need one packet of the US-05. I have done this many times. So long as you let it ferment and clean up completely you should have no problems.
