Anyone ever tried it? If factories can do it then it shouldn't be too hard. The simplest way seems like it would be to pour out a yeast cake onto a cookie sheet with wax paper on it and let the water evaporate. Would this kill all the yeast or otherwise make it not viable?

Denny, that was an interesting, if technical, paper. I learned a lot about yeast but I'm still wondering if it's possible to dehydrate yeast at home, even if not in the most efficient factory method. If you dry a yeast starter on a baking sheet will any of the yeast survive?
