ok fellow brewers. I was very intrigued by this yeast. I bought it and plan on using it on Saturday. However, i'm not sure what i should do with it. If anything i'll make a nice wit, but i was hoping for something with a little bit more complexity in the malt bill outside belgian pils, wheat, and some oat. Can you all give me some suggestions? Thanks! Oh, second question. I love my beers on the tart side, would you suggest under pitching to get a more tart beer? any and all suggestions would be great
