So our first batch of beer has been fermenting (we are doing single fermentation) for 16 days now. It didn't start bubbling out of the airlock until 6 days ago and now the bubbling has slowed back down. Is it safe to open the bucket and take a gravity reading?
 
I used to take the first FG reading at 14 days. It was never quite done yet at that point. So I started waitng till the 3 week mark to do the first Fg test. It's usually within a point or two of being done at that point. And settling out clear or close to it. But you can def test it now,just starsan anything touching the beer forst.
