Sorry don't know why the pictures are sideways. This is the grain bill and hop additions for IIPA. Actual Og was 1.085. The Second beer i added kumquat in the last ten minutes of the boil. Its Og was 1.050. Haven't taken a fg yet.

The guy I brew with had done a few Kumquat beers (a saison and a kolsch) with Wal-Mart kumquats in the boil, and both turned out great! He used about 5 lbs, and got a nice citrus nose and subtle citrus taste at the end of the palate.

Wow 5lbs I only used about two cups...do you know when he added the kumquats. Boil or Secondary.?
 
He added them at 15 min in the boil. Cut the very end off each one, soaked them all in sanatizer for about 20 minutes, then squeezed them all to get the sour orangy juice and the sweet rinds in the boil.
