First cider - 1 gal trial batch - too easy?

Thought I'd try a 1 gal trial for my first cider to decide if I prefer a dry finish, still, etc, or plan to back sweeten, force carb, etc (I have a kegging setup)

1 gal treetop apple juice (pasturized with asb. acid)
Nottingham's dry yeast.

NOTHING else...think it was about 1.040 before pitching, and after a week, 1.002, tasted great, very close to Strongbow! I'll let it finish out over a couple weeks, but planning on upping to 5 gal, and carbonate to 2.5 vol, like my marzen, after getting my wife's input.

Is it that easy? Any recommendations?
 
Yep, it really is that easy. Congrats on your first successful batch. If it taste's good now, there's no reason to wait for another couple of weeks. enjoy!
 
I'm finding simple is better with ciders. We make em b/c we love apples and alcohol, so- simple helps keep apple flavor I think.

My most recent cider has been best. Two gallon batch has two cloves, two cin sticks. 1/2 teaspoon of nutmeg, 1/2 cup sugar(I thinks), and ale yeast. It's still in primary, but, samples have been amazing! Og was 1.06, so, it should be nice and drinkable!
