So I recently tried a special release beer at a local brewery called NoDa Brewing Co. The beer that they had on tap was awesome. It was pegged as a Red Pale Ale (8% abc, 17 SRM, 72 IBUs). Their description said it was hopped with Nelson Sauvin, which provided a nice sweet fruit tone to it. At any rate, it inspired me to come up with my own hoppy red beer...an Imperial Red Ale if you will. Here's what I came up with. Any advice or tips would be cool.

Recipe Type: All Grain
Yeast: White Labs Cal Ale or Cal V
Yeast Starter: 1.2L
Batch Size (Gallons): 5
Original Gravity: 1.082
Final Gravity: 1.018
IBU: 72
Boiling Time (Minutes): 60
Color: 17.5
Primary Fermentation (# of Days & Temp): 10
Secondary Fermentation (# of Days & Temp): 7-14 to clear

Imperial Red Falcon

17 lbs - 2-row
2.75 lbs - Crystal 60
1.25 lbs - Vienna
.25 - Crystal 120

(Mash 60 mins at 155F)

1.75 oz - Galaxy (14%) @ 60 min
1.50 oz - Falconers Flight 7 Cs (9.9%) @ 10 min
1.50 oz - Falconers Flight 7 Cs (9.9%) @ 0 min
1.00 oz - Falconers Flight 7 Cs (9.9%) Dry Hop 7 days


Pitch either WLP Cal Ale or Cal V...undecided

I might skip the dry hop. I want it to be hoppy but not 100% hop dominant. I'd like the malt to to come through as well.

Cal v. Also up the late additions and dry hops. 4 oz dry would suite that big red. Looks good.
 
made some changes to the hops. Switched the Falconers over to my new fav. Nelson Sauvin. Adding some more staggered late additions and possibly some dry hopping as well.. Also, thinking I'm gonna go with WLP001. I don't think that the Cal V will be able to get down to the final grav I'm looking for. At full attenuation the Cal V would take it from 1.082 down to the mid 1.020s. I'd like to finish around 1.018 ish.
 
Rehashed this recipe. Going with Magnum for bittering since it is neutral and Nelson Sauvin with either Citra or Galaxy the rest of the way through. Doing 1:1 ratio now as I know both are pretty powerful.

instead of dry hopping, I am going to dry doing a hop stand using my whirlpool inlet.

Whirlpool hops at:

1 oz - Nelson Sauvin (12%) - @ + 15 min
1 oz - Galaxy or Citra (14%) - @ +20 min
1 oz - Nelson Sauvin (12%) - @ +25 min
