Only my second AG recipe, I'm not very knowledgable of specialty grains..From what I have read my percentages are reasonable, but any input on the grain bill would be much appreciated. Was really wondering at what percentages the chocolate malt flavor would become noticeable/too much. Going for a ridiculously hoppy brown. Thanks in advance

Wow! That's a whole lotta hops.. 15oz for 5 gallons! :drunk:

Not sure how much malt backbone you need for that kind of hopping, but I had a few thoughts on your grain bill.

I think the Victory & C-120 are not really needed. You already have the maris otter base grain plus some munich to give it toasty, malty goodness. I'd up the chocolate malt to at least 1/2# ... maybe a bit more... No more than 1# on the outside.

Hope it turns out great!

You said it right, it is ridiculous. I'd say it's a waste of a lot of hops. I'd hazard a guess you're not growing hops in Alabama so I'd say take 10-11 ounces and keep them for other batches. I don't think you will miss them really. Tone it down and redistribute some of those hop quantities around and you'll do just fine for a hoppy brown. No need to make a beer so complex you'll never be able to exactly repeat it if you like it. Simple is good. Save some hops for later batches is what I'd do.

Did you brew this? Sounds interesting which is good... I do a similar big brown ale with lots of Nugget and some Colombus. It comes out deliciously chocolatey, earthy, and dank.

I don't think the munich would contribute much to all that. And maybe ditch 1 hop variety to clean it up a bit. From my experience anything too citrusy doesn't go well with chocolate or roasted malts. When I first started brewing AG I had a tendency to overcomplicate recipes which often made my finished brews taste kind of muddled.
