Hi, I'll be brewing my 3rd ever brew in a few weeks and am going to have a bunch of leftover unused grain from this and the previous batches I'd like to apply to making a 4th. So far I've done a Raspberry Wheat, Irish Red and soon I'll be doing the White House Honey Ale. All have been 5 gallon batches, 3 gallon boil, partial mash/ extract brews. Thus I have some opened, partially used bags of grain I'd like to get used up. I also have and will have some extra hops I've acquired for no good reason on various trips to the Bell's store. I'd love some partial mash recipes that could utilize what I have with just a purchase of some extract and yeast... Or I may just make something up. What I have is

.8 lbs Briess Roasted Barley Unmalted 6row 300l
.66 lbs Gambrinus Honey Malt 15l
.5 lbs. Briess Caracrystal Wheat 45l
.5 lbs. Weyermann Cara Amber 2row 25l
.5 lbs. Weyermann Melanoidin 2row 28l
.5 lbs. Muntons Crystal Malt 60l
.5 lbs. Biscuit/Victory Malt 28l

1oz Williamette
1oz Sorachi Ace
1/2 oz Kent Goldings
1/2 oz Fuggles

Here's an idea-- (5 Gallons.)

-6.6 lbs sparkling amber extract (briess) lme (BUY)

Mash (60mins @150)--
-1 lb maris otter (Just a thought but up to you)
-.35 lbs victory malt
-.25 lbs muntons crystal 60 l
-.1 lb Roasted Barley

Hops- Sorachi to bitter (1 oz-- 60 mins) -- never used myself but should work fine
1/2 oz E.Kent Gold for 20 mins.
1 oz Williamette @ flame out.

YEAST-- what ever you like. Maybe Nottingham dry ale yeast.

IF at all possible strongly consider full boil
***don't forget about boil off.
 
Thanks, 2 questions. What would you call this beer, Amber/brown ale? And I'm more familiar with a 20 minute steep. So when you say mash for an hour, I would essentially steep the grains in a grain bag for 60 min instead of 20 and sparge as usual? Which I'm guessing converts a few more starches then a simple flavoring and color steep?
 
I would think this would be categorised as a brown ale. As far as steeping vs mashing, it would convert more esp from the Maris otter (if you use it) and victory malt. Actually though 45 mins @ 150 should suffice. But yes- in the grain bag. Sparge as usual.
