IIPA Help please!

So I had this idea for an IIPA that is a globe trekker, using different grains and hops from all over the world. I was hoping to get some feed back about the grain bill and the hop schedule. What do you think of it?

All of the wrong hops (aside from cascade). Maris Otter is debatable, but it can still work.

That's a long ass secondary!!

FG with a starter should be more like 1.015

Way low on the priming sugar for 5 gal
 
While the concept isn't bad ... I don't think that combination of hops will taste very good. You should decide if you want an earthy/resiny or citrusy aroma/flavor and then pick your hops that compliment each other. Also there are a lot of Hops from Australia/New Zealand you should consider. I would also say that you don't want to go to a secondary for that long. IIPAs are meant to be fermented to completion then dry-hopped for 7-10 days and bottled/kegged.

In terms of the hop profile I wanted a more citrus aroma/flavor... I have been looking to see what NZ/AU hops I could use so I'll have to update this bad boy. Do you think galaxy would pair well with cascade?

As for the secondary, I'll shorten it to 2 weeks and keep a 7day dry hop.

Maybe I'll go with cascade and Nelson sauvin for flavor aroma and give it a good dose of German and English bittering.

I was going to do 5lbs MO and 6lbs pale with no honey but cut the lb of MO and added that in. The grain bill is based off of a recipe that was done on NBTV with honey added in.

Secondary is gonna get cut down heavily.

I'm hoping my yeast will attenuate better and really drop it low, hoping for 1.012.

As for priming, according to iBrewmaster this should work since its a 3gal batch.
 
2 oz priming sugar for this beer won't work out too well for you. I just used that amount for 4 gallons of 1.073 / 1.012 IIPA and it was good for me, but on the extreme low end of carbonation for the IIPA style. You might want to do some more research with different priming calculators and consider upping it a bit to 3.0-3.5 oz. for a beer finishing that high with a 5 gallon batch size. Otherwise, you'll have full body & low carbonation, which will essentially seem like juice on the palate.

If you want better attenuation, you'll need to change up a few things, some of them optional...

1) Use more corn sugar
2) Mash lower and longer
3) Reduce the OG a bit more
4) Lower the specialty malts
5) Make a yeast starter

Thanks for the help! This might be my first "big" beer and a learning experience.

When you say mash lower, how much lower? 90 mins at 148F? I think what I'll do is drop the specialty malts some and mash longer and lower.

I wish I could make a starter but I don't have the stuff for it yet. My biggest container I have is a 1quart measuring cup. I need to get me a 2000ml flask. According to mr.malty I need 183b cells, if I have yeast @70% viability I need 2.6vials of yeast... I really need a flask and some dme.
 
OP, those were just general recommendation to lower FG.

Also, are you topping off with 2 gallons of water to reach 5 gallons for a final OG of 1.090? Or are you just bottling up 3 gallons?

I am not topping off. This is a 3gal BIAB batch. I like the smaller size batches because then I get to brew more often which means more types of beer. Also if I mess up I don't have as much "junk" beer.
 
Sorry for the misunderstanding then! 2 oz is fine to prime that. You see so many 3 gallon boils / 5 gallon batches on here, things can get confusing when it's the other way around this time.

Yeah I deal with that when I'm looking at recipes. I search for 3gal and a bunch of stuff using top off water is discussed.

So I think this recipe idea is going on the back burner for now and I'm going to focus on either an AIPA or not such a lofty IIPA. Lol. I'll be making a new thread for it. I'm loving the feed back I'm getting and it totally helps to bounce ideas off of other people and get their ideas and opinions!

It's just a little complicated, but it doesn't have to be put on the back-burner. Drop the MO, make it mostly 2-row, drop or lower the honey malt, and change the hops to some that may complement each other a bit better. I think you could do 85+% 2-row, 2 oz honey malt, ~5% Caravienne, some corn sugar, and Cascade, and Nelson hops to death and you'll have a great beer on your hands, IMO. Dive in! :mug:

Well here was my other IIPA idea... Drink enough and every girl/boy will look good...

Some feedback would be nice since I want to do a big beer this weekend and I've got a pale ale lined up for the weekend after.

A few questions though... What should my fermentation schedule look like? Does this need bottle aging/batch aging to really improve its flavor? and any yeast suggestions? The FG is what I'd like to be at... The autocalc value was something like 1.026.
