    Apids on Harvested Hops, what to do.

    Hopefully they will just move on as your hops dry out. That is what some of the more knowledgeable folks have said here.

    slightly high OG

    I just had almost exactly that same problem with my last batch. I made sure I aerated very well, and it went just fine. Transferred today into the secondary, and the OG went down to 1.011, so the yeast did just fine. So yeah, don't worry, have a home brew!

    How long to dry hop in the secondary?

    My first time dry hopping with fresh (but dried properly on a screen for a couple days then stored a couple weeks) hops from my fence. 1 oz. I transferred from Primary to Secondary today, then will bottle next week I guess. I guess I could have let it sit in the secondary before dry hopping...

    As an update, it had a good, strong primary stage all this week, starting Monday morning after pitching Sunday night, and is still going, though slowing down. Still getting burps through the blow off tube, though as I said, slowing down. So hopefully it will be ok. Next time I plan on pitching...

    So how much US-05 does a guy use for a beer around 1.05-1.07? I think I will try that route next time, and also keep some on hand. It is chugging away happily so at least what I pitched is working, even if not as well as if I had pitched more.

    I was shooting for right at 1.060 which was the capacity of my Wyeast 1056. I was at 1.063 or 4. I pitched tonight. Should I find more yeast and pitch more tomorrow or is this in the range of close enough?

    Well here is the revised recipe. Hopefully it will work out. I may back off a bit on the hops in light of what SirHopsalot pointed out. I don't think I can really wait very well, or the fresh hops will be gone.

    Belay that thought on the late starter. I am going to reduce the OG to within the smack pack's capabilities and focus on hop flavor rather than a higher gravity. 7 lbs of DME now for a starting OG of 1.056.

    There is a chance I can do it later. We have a family gig to go out to now. I was hoping getting it done first thing in the morning, and letting it go until in the afternoon would hopefully be good enough. Seemed to say so in the starter thread in the beginner section.

    Ok, that sounds good. I will take some ideas from that. Later add on the fresh, but maybe higher amounts. I plan on dry hopping with the fresh hops I dried that are in the bag shown above. But what is knockout?

    Well, I suppose things like this come from not brewing often enough. I may put off my brew until next week and make sure I have enough yeast etc. I am going to find an OG calculator and re-work my recipe, and make sure I have enough yeast on hand.
