How old is your oldest beer? (And is it drinkable)

Last summer (2013) I drank a bottle of beer I brewed in 1986, along with a bottle of cellar stored Thomas Hardy's from 1990 or 1992 (Can't remember which). Both were very similar, and drinkable, they had restrained but present carbonation, no hop aroma, very little perceived bitterness and were...

    what's the deal with efficiency

As noted above, efficiency does not matter, but what does matter is consistent efficiency, when you lock in one of your favorite recipes, you want it to turn out the same every time. If your efficiency varies from batch to batch you can't turn out the beer you designed. If 60% works for you...

Taking my keg on vacation... how?

If you don't want to mess around with jumping kegs, you could do what I do and draw off a couple of glasses, before you move the keg, until it runs clear. Then transport the keg, any remaining re-suspended trub will be minimal upon arrival. Also plus one to a bucket with ice in it to keep the...

    Tettnang or Spalter Select?

Over the years Tettnang has become my favorite hop, eclipsing Hallertau. I am going to expand my hop yard this year and was planning on getting some Tettnang, but based on some things I read I was wondering if maybe I should go with Spalter Select, which I haven't brewed with in a long time...

converting corn grits to corn maize

I thought I could add my flaked corn maize straight to the mash? I am not using the grits. Yes you can. I want to know how much flaked corn maize to add to the mash. 1:1 If your recipe calls for 2.66 pounds of grits, use the same amount of maize. Are you saying that I need to cook...

    Ranco dual programing issues

Since I don't know if your using it as a two stage or single stage controller, (Whats the ambient temp around your ferment chamber)? I am going to guess your just looking to heat your chamber to 66F IF that is the case, simply plug your controller into the pad, and scroll through the...

    Growing Hops Near Chicago

At work so I have no photos but as far as when I planted them if you were here you might remember we had some unseasonably warm weather in March. Put them in the ground and then some cold weather came back and I thought they would die. They didn't, although I have no way of saying if rhizomes...

    Growing Hops Near Chicago

I live in Chicago, and last year got two crowns each of Santiam, Mt Hood and Centennial from Great Lakes. Created a slightly raised bed and combined my soil with a combination of potting soil/garden soil/peat moss, digging holes about 18" in the bed and filling with the same mix-if you...

    Christmas/Milwauke PH 56

First of all, Merry Christmas to everyone on the forum! For Christmas, my eldest son and brewing partner, Brian, gifted me a Milwaukee PH 56 meter. Truthfully, I haven't been to subtle in expressing my desire for a PH Meter the last couple of brew sessions so its nice to know he was...

    Kegging/barrelling before fermentation has finished

Sounds like your looking for a spunding valve, it allows you to capture just the amount of gas you wish to retain for carbonation. BYO or Zymurgy had an article on making one awhile ago and I bet there is information on them in the DIY section of the forum. I'm planning on putting one together...

    Midwest Supplies

I am not jumping on Midwest with this post nor do I claim to know anything about I.T. But, my Master Card went bust yesterday with a $30.00 purchase to some Gaming/Software outfit with an additional $1.00.00 charge to some accounting place. Purchased kegs from Midwest beginning of July...

    Oktoberfest recipe critique requested

Looks like a nice beer, albeit with a pretty involved hopping schedule for an O-fest, particularly with the 45 min additions. Only thing I would definitely do is to lose the crystal malt, I know people use crystal in this style sometimes but your not going to need it and you should be shooting...

    Clove from WY3711

Agreed with the above, 3711 at 71-74F is a great yeast with no clove notes at all. I know that many ramp up even higher than that, later in the ferment, but I haven't found it necessary. There is a really long thread singing the praises of this yeast if you are looking for more opinions.

Wit - 3944 not Fermenting out

Patients is a virtue with this yeast. Brewed a wit with 3944 on May 5th, with an OG .44, and as of last night it was at .16 3944 always seems to start like a beast, with a huge krausen and then slows down and crawls to a finish. I'm sure other guys using this yeast will tell you the same...
