    Just did a batch using WLP518. OG:1.052 FG: 1.010 in 3 days. Pitched at 85F and airlock activity started in 3 hours . Today is day 7. I just kegged it and i tasted the sample, it was fantastic.

    Thanks for the tips! I think i'm going to get a few 1g fermenters and split a 5gal batch to experiment with it. Tha way i can see what it can handle and how the hops effect the LAB production and see what esters i can get from it. Cheers!

    Omega Saisonstein's Monster OYL-500 yeast, anyone?

    I made a very basic Saison with it last month. It is delicious. Very dry and slightly peppery, with just a hint of that bubblegum sweetness. OG: 1.050 to FG: 1.001. This is my favorite Saison strain that I have used so far. The last one i tried was B56 Rustic which i hated, way too much bubblegum.

    5 Day Sweet Country Cider

    Yeah I just did a batch like that. However 5-7 days might be too long depending how sweet you want it. I did mine for 3 days and it was about 1.030 FG which is where I like it. I let it totally ferment out last year and I did not enjoy it at all. YMMV. Good luck!
