    Wyeast 3944 Belgium Temperature Range

Folks, my basement is too hot to ferment this strain but I have a temperature controlled wine cellar that's within 60 to 62 degrees. I know this is below the recommended range for this strain but I'm itching to make a Belgium Witbier which I was hoping to brew a month ago but life got in the...

    Sanyo 4912 Thermostat Override

Folks, I'm thinking about replacing the thermostat on my Sanyo so I can dial in temp a little better. At the surface I thought I could use a standard house digital thermostat and somehow wire that in. Can this be done ?

How to hook up a portable CO2 Charger

Folks, I just bought a portable CO2 charger and it has a threaded connection. My ball lock has a barbed connector, can someone tell me how to adapt the barb to the thread. It looks like it was meant to fit a Shrader valve.

First Wine Batch - what to do with blowoff

ok if this was beer I'd attach a blow off tube but I'm not sure what do. My first batch of wine (well EdWort's Apfelwein is really my first) is fermenting like crazy (Primary) and I have an airlock on it filled with Vodka. That's not working out so well, so I was thinking of attaching a blow off...

Beamish Irish Stout Clone Recipe ?

Folks, has anyone brewed BYO 150's version of Beamish Stout ? If so, how close to the original did it come ? Thinking of brewing it this weekend... Also, the recipes I've seen add cane sugar which I've never used ; I'm assuming this will make the beer "dry" but does it end up adding any...

Is there a way to make a brew less bitter

OK, I royally screwed up. I'm making a lager (Sams Clone) and I took a gravity reading today, sampled it and it's way too bitter. I had some of the hops left over and I rechecked them and though I swore I used a 6%AA Simcoe hop (boiled for 60 mins), in reality I used a Santiam 12% AA for 60...

    Lager Question

Hi, I have a lager in my primary for 19 days now; this seems like plenty of time for the beer to reach it's target gravity, though this is my first lager so I'm not sure. OG was 1.050. I used Wyeast Bavarian Lager. I had to ferment at a slightly lower temp than what was reccomended ; 44f and...

    Lager Fermentation

Hi, this is my first lager and I've read a bit about it on the forums and I realize that my temp is probably on the cold side (43f) but it's fermenting and that's good. I can move it so that the temp is 54f. It's either 54 or 43f, nothing in between. My gut says to keep it at the lower temp and...

How Long Can I Store a High ABV Ale

Folks, I brewed a St Arnold's xmas ale clone back in September and it was way to green to drink. So, I left it, pressurized the keg and disconnected the CO2 tank. I tasted it again this week and it's better but still green. So will it get better if I leave it in the Keg until xmas 2008 and...

    Carbing a Lager

I'm about to brew my first Lager. I think I know what to do but I'd like to transfer to a corny keg as my secondary. The only reason is that it fits nicely in my fridge and I can control the temp down w/o a problem. So, my question is will it naturally carb over the month or so spent in the...

Hop Help for Sam Adams Lager Clone

Folks, I'm in the NYC area and we really don't have any homebrew shops. So just about everything I get is online. I'm trying to find Hallerttau Mittlefruh for a Sam Adams clone but it's really not looking good. Does anyone know of a good substitute that might be available ?

Munton's Hopped LME ; EBU Question

Muntons seems to express bitterness in terms of EBU's. Does anyone know if there's a way to convert this to IBU or I"m I mixing apples and oranges ?

Bad Smell From My Latest Brew

Hello, I brewed a St Arnold's xmas ale clone on Sept 14th. It's about 7% abv. Primary for 3 weeks, secondary for 2 weeks and then transferred it to a keg and kept it at 40 degrees. I sampled it the other day for the first time and it's got the band-aid smell and taste. I know the beer...

Global Warming is Killing Me !

OK ; out of kegerator space so I need to put the kegs in the garage, force carb and bottle a six at a time (yup from the Keg). It should be a happy 42 degrees in Southern NY. I'm outside in my shorts and it's north of 70 degrees and I don't have a chance in hell in carbing these kegs. The...

    Bottling from a Keg Technique

Does anyone bottle from a keg without using a counter pressure filler. I don't want to spend the $$ as I normally keg. I just don't have anymore room in my kegerator. Are there any good techniques, I was thinking of lowering the pressure and just slowly pouring the beer (after force...

    First Time Bottling

Folks, All of my kegs are filled and I have extra ingredients so I need to brew! With the exception of my first kit, I have little experience bottling. I always transfer to a secondary and let my beer age for a while. Typically a month or more depending on the type of beer. So, I'm...

    Question About Keg Carbing

Folks, when I carb a keg I force carb with CO2 but I keep the CO2 hooked up for the duration of the carb cylce. But... Does the gas really need to stay connected. For example, if I pressurize the keg @ 30 PSI at 40F and then disconnect once it reaches pressure can I just let it sit for a week ?

    Condensation in Carboy

Folks, I have a RIS in a glass carboy (Secondary) for two weeks. Today I noticed condensation on the inside of the glass. Do I need to worry about this ? the RIS is a high alchohol beer so I'm pretty sure there's not much chance for anything to grow but I'm concerned.

    Blow off Tube Came Off

13 days into a St. Arnold's Xmas Clone and I just noticed my blow off tube came off, probably 36 hrs ago. It's a fairly high alchohol brew so I'm thinking not much would grow in it. But, I'm also thinking there's not enough CO2 pressue to keep air from getting in. So, my question is... What...
