    you can add anything later... but.. i suggest a Ball valve and dip tube at the MINIMUM so you dont have to tip pour into your fermenter. good luck

    5 qts is huge! i'd scrap and start again.... i just had this same thing happen last week so i put a sterilized muslin bag over the opening and then topped that with foil.. no bug problems since then

    Pliny the elder? it is in this article: http://www.homebrewersassociation.org/attachments/0000/6351/doubleIPA.pdf might have some trouble sourcing the Simcoe hops but check out www.farmhousebrewingsupply.com they have a "Pliny Pack" that includes all the hops (out of stock at the moment 8/5/11)
