    So I am about to brew this, just got the cereal mash going for the cornmeal... and now I just realized I have a big bag of Vienna not 2-row. I actually have no 2-row. Would this still turn out ok using mainly Vienna and maybe a bit of pilsner??? Help lol!

    Grain to glass, not a word of a lie, exactly 2 weeks. And it's excellent. Bottled. It is properly carbed at 3 days in the bottle. I told my husband we have to drink all of it this weekend in case I messed up somehow priming it... Don't want bottle bombs... He took a sip, hid a smile, and obeyed...

    Update: my toddler found my fermenter in the cold pantry... And well, anyone with kids knows how that can go. It developed some king of infection. I'm dissappointed, I was looking forward to learning from this one, even if it didn't quite work out too tasty.

    I've learned to trust only the hydro readings. I'm surprised by mine... I posted earlier that I was worried because the cider I used has k-sorbate in it, and there was little sign of fermentation. I over pitched the yeast by a lot even. But hydro readings are telling me that it's fermenting...
