I use a brush on my better bottle and haven't had any issues with infections. I have fermented about 10 beers in that better bottle so far.

I bought a pound of Spalt from the hops shack recently and they were labeled as 1.5% AA.

Vienna/Cascade turned out really nice. I was using wet cascades though...

A mild would be a great second runnings beer. Look up a recipe, you might want to cap with some chocolate malt for color.
